The Company’s History
The corporation was first formed in 1996 as part of a restructuring of Morrison Restaurants Inc. This company is located in Maryville, Tennessee with over 736 locations around the world.
The flagship brand, Ruby Tuesday, is located mostly along the eastern coast of the United States. The corporate office also owns Lime Fresh Mexican Grill which has far less locations than Ruby Tuesday.
The name comes from The Rolling Stones song “Ruby Tuesday” which was a popular tune at the time the restaurant was first conceived. The name had been suggested to the founder by Bob Hope.
Ruby Tuesday began as part of a $10,000 endowment, combined with another $10,000 that the founder put together with money from his University of Tennessee fraternity brothers.
The first location opened in 1972. It was build directly beside the Knoxville campus of UT. The building is still standing, but that first location has closed since then. Over the next ten years, the restaurant continued to expand with a new location every nine months on average.
In April of 1982, the founder sold his 16 Ruby Tuesday restaurant chain to Morrison Inc for $15 million. The founder himself became the president of a Specialty Restaurant Division an the chain itself received plenty of financial support from the new owners.
By 1985 there were over 35 locations, all of which contributed to the success of Morrison’s as a whole. In 1992, the original founder became the CEO of Morrison Restaurants Inc.
In 2007, the company started making major changes to its brand’s identity. The concept behind this was to move away from the “bar-and-grill” image, to one that focused on casual dining.
Pentagram design studios was hired to create a new public identity. This started with a new logo, and also new packing for the “Ruby TueGo” service.
This was followed by a full remodeling of all the Ruby Tuesdays locations. Gone were the decorations and lamps. Instead they were replaced with a new menu, higher-quality food, revamped techniques, high-definition televisions, and even a guest Wi-Fi network.
The CEO described these changes in the 2007 Annual Report by saying:
“Elevating Ruby Tuesday above the crowd to a memorable, high-quality dining experience is critical to our growth and success. We are engaged in a three-year plan to reposition, reinvent and reinvigorate the Ruby Tuesday brand. We began by bringing our guests fresh, exciting new menu choices, then raised our standards of service, and are now creating an innovative new look and style for each and every restaurant. This revitalization will appeal to our loyal core guests while attracting a new generation of consumers.”
